Vanita's Insalata Verde
"Tarragon vinegar adds a special note of flavor to this refreshing and colorful salad. This is my Mom's recipe that she shared in a booklet called "An Adventure in International Cooking" which she helped compile for our local 4-H in Madison County (New York State) back in the early 1970s. We love this salad and make it often! "

Step by Step Method
Step 1
Wash and dry Romaine and leaf lettuces well; tear into bite size pieces and place into a large salad bowl.
Step 2
Cover with remaining salad ingredients; chill until serving time.
Step 3
In a small bowl, whisk together olive oil, vinegar, anchovies and other seasonings.
Step 4
At serving time drizzle vinaigrette over lettuce mixture, toss to coat.
Step 5
Serve. Enjoy!
