"I tried this sandwich for the first time at a popular local restaurant and just had to copy it. It is a nice fresh tasting sandwich that I like to serve with tomato soup. The cook time noted is approximate, depending on thickness of breast."

Step by Step Method

Step 1

Mix the yogurt and pesto together in a small bowl; set aside.

Step 2

Sprinkle chicken breast with salt, pepper and garlic powder to taste.

Step 3

Oil the BBQ grill so breasts will not stick.

Step 4

Place breasts on preheated grill and cook until cooked through; this depends on thickness of chicken breasts.

Step 5

Place chicken breasts on a plate and cover with foil to keep warm.

Step 6

Slightly toast the bread slices.

Step 7

Place the lettuce and tomato on top of bottom slices of bread and top with grilled chicken pieces.

Step 8

Add the slices of pancetta, roasted red pepper and yogurt/pesto sauce.

Step 9

Top with bread slices and enjoy.

Fantastic and so easy! We skipped the roasted red peppers and pancetta this time but will do it in the future. I usually mix pesto with mayo for a sandwich spread but really enjoyed this healthier version! We really liked the simply grilled chicken, too. These sandwiches were very tasty and hit the spot!

A great sandwich. I skipped the pancetta and red pepper but otherwise made as directed. Very good sandwich which was enjoyed by all. Thanks for sharing!

I can see why this was on the menu at a popular restaurant - it is sooo good! I didn't have the pancetta but I did have some of our homemade 'Parsley and Basil Pesto' and one of our favourite breads the pumpernickel on hand to make this great tasting sandwich. It looked as good as your photo - and tastes as good as it looks. Thank you for sharing!
