Step by Step Method

Step 1

Chop the carrots and potatoes into equal-sized pieces. Place them in a large pot along with the garlic and cover with water.

Step 2

Bring to a boil, reduce to a simmer, and cook until the vegetables are tender (about 20 minutes).

Step 3

Drain and mash well then add the remaining ingredients and beat until creamy.

Step 4

Place in a serving bowl and serve at room temperature.

I made some adjustments to this, but boy did it come out fantastic. I didn't mash it or grind the cumin seeds and used about half the carrots, because that is all that I had. This is seemingly simple, but is greater than the sum of its parts - making for something very special. I could definitely eat this as a meal.
