"Simple, easy, and delicious. It's really hearty, full of flavor; but, simple to throw together. This recipe makes, approximately 2 large dinner salads - as a main course; or, 4 smaller salads for lunch, or served with a bowl of soup for dinner. Now, I used a chunk light or solid albacore tuna, in a package; I think you get a bit better quality. But, use what if available. Also, I tend to dress my salads lightly; so, I think there is plenty of dressing. However, you can easily double the dressing recipe; it will last in the refrigerator a good week - and, is good on any salad, and makes a great marinade."

Step by Step Method

Step 1

Dressing ... Add all the ingredients to a small cup or bowl, and mix to combine. Again, I dress my salads lightly; but, you can easily double the recipe according to your tastes.

Step 2

Salad ... First, squeeze the lemon juice over the avocado and lightly toss in a small bowl. This prevents them from turning brown. Then, add the arugula, beans, onion, cucumber (if using a classic cucumber; lightly seed and peel before dicing), olives, and half of the dressing to a salad bowl; and, toss to combine. Add the avocado; and toss lightly again - careful not to break up the avocado.

Step 3

Plate and Serve ... Plate up your salad, and top with the tuna and Feta cheese. Drizzle with the remaining dressing. Remember, you can plate 2 big salads; and 4 smaller salads. It just depends what else you plan to serve with this. Also, top with as much tuna as you like. As with any salad; the amount of each ingredient is flexible.

ENJOY! ... Serve with crusty bread! This would be great served with a bowl of soup for dinner. Also, you could serve this family style on a big platter as well.
