Tuna & Potato Cakes

I made these last night for dinner, and DH and I did really enjoy these. The only change that I made was to use fresh breadcrumbs , as I had a heap of leftover bread, so I decided to make go with my own breadcrumbs. So I used an egg wash first then.... Read more
- 1/2 cup mashed potatoes (cooled)
- 1 can (120 gram) tuna (in water)
- 2 tablespoons mayonnaise
- 2 tablespoons grated yellow onions
- 2 teaspoon chopped parsley
- 1 small egg (beaten)
- 3/4 cup panko bread crumbs
- 1 tablespoons olive oil
What You Will Need
No special items needed.
Mix all the ingredients except crumbs together and form into 4 patties.
Coat the patties with the panko crumbs.
Heat oil in a skillet over medium high heat. Add patties and brown on both sides for approximately 4 minutes per side - Watch they don't burn.
