  • Be sure to use heavy whipping cream for best results.
  • Toasting the coconut before adding it to the recipe will give the scones a nice flavor.

  • Instead of Bisquick Baking Mix, you can use self-rising flour. The benefit of this substitution is that it will provide a lighter and fluffier texture to the scones.
  • Instead of pineapple tidbits, you can use diced peaches. The benefit of this substitution is that it will add a more subtle sweetness to the scones.

Lemon Coconut Macaroon Scones Replace the mango with 1 cup of lemon zest, replace the nutmeg with 1 teaspoon ground cardamom, and replace the pineapple with 1 cup of lemon juice. Add 1 teaspoon of lemon extract to the dough. Replace the macadamia nuts with walnuts and the 2 tablespoons of sugar with 2 tablespoons of lemon sugar.

Coconut Lime Rice - A fragrant side dish that pairs perfectly with the Tropical Macaroon Scones. This simple rice dish is made with coconut milk, fresh lime juice, and fragrant spices for a delicious and flavorful accompaniment.

Pineapple Mango Salsa: A sweet and spicy salsa made with fresh mango, pineapple, jalapeno, lime juice, and cilantro. This salsa is the perfect accompaniment to the Coconut Lime Rice, as the sweetness of the fruit pairs perfectly with the fragrant spices in the rice.
