Step by Step Method

Step 1

MEXICAN BEEF: Make Mexican beef by frying beef and onion together; drain fat. Add garlic; add cumin, oregano, and chili powder. Add tomato sauce. Simmer for 20 minutes.

Step 2

VINAIGRETTE: Mix red wine vinegar, honey, lime juice, chili powder, olive oil, parsley and garlic powder together.

Step 3

Preheat oven to 400 degrees Fahrenheit.

Step 4

Add a little meat to refried beans; spread on tostada.

Step 5

Place on a cookie sheet.

Step 6

Top with cheese.

Step 7

Bake in oven until cheese melts and beans bubble.

Step 8

Plate; add 1/2 cup lettuce, sprinkle with vinaigrette, sprinkle on tomatoes and black olives.

Step 9

Take a spoonful of meat; put on top; sprinkle with cheese and side with sour cream and guacamole.

Oh, this was so yummy. I made a little mistake but it still tasted great. I mixed all of the beans with the meat before layering it on the tostada...oops. Also, I couldn't find flat tostadas and didn't feel like frying some up - so I used tortilla flat bowls. These were such a delicious treat for us, especially with all of the yummy toppings. Thank you!

Daily Inspiration

We enjoyed these tostadas very much. We make bean tostadas all the time at home so it was a nice change to add beef to them. We added lettuce, tomato, avocado and cheese to top them along with some salsa. The dressing was great, but I'll save it for a salad as we prefer salsa. Definitely a repeat at our house. : )

This made a wonderful dinner for us tonight. My DH thinks the dressing is what puts this recipe over the top. We loved all the basic ingredients : meat mixture, refried beans, lettuce, tomato, avocado, sour cream, monterey jack cheese, tortillas, etc. This feeds a lot of people. If making for only 4 people would definitely cut this recipe in half.
