"This recipe is from a book "Tapas" by Adrian Lissen. It's like a savory version of french toast, and is served as a tapa. Might seem strange, but it's very good!"

Step by Step Method

Step 1

In a small bowl, beat the eggs with a few drops of very hot water.

Step 2

Add the minced garlic, salt, pepper and mix well.

Step 3

Heat oil in a frying pan.

Step 4

Dip a bread slice in the egg mixture, covering both sides well. Fry the bread until golden brown on both sides. Set on a rack if you feel the need to drain, although these don't come out very greasy. Don't drain on paper towels or they will get soggy.

You may want to whisk the egg mixture between slices so that the garlic doesn't settle to the bottom.

IMPORTANT: its necessary for the oil to be very hot so that the eggs cook immediately upon contact. Be careful to turn bread before the garlic burns.

  • For best results, use a good crusty bread for the slices.
  • When using olive oil, make sure to use extra-virgin olive oil for best flavor.

  • Substitute coconut oil for the olive oil for a healthier alternative. Coconut oil is high in healthy fats and has been shown to have a range of health benefits.
  • Substitute whole wheat bread for the white bread for added fiber and nutrition. Whole wheat bread is a great source of fiber, which can help regulate digestion and keep you feeling full longer.

Herbed Torrijas Add 1 teaspoon of fresh chopped herbs of your choice (such as oregano, thyme, or parsley) to the egg mixture. Fry as instructed above.

Patatas Bravas: A classic Spanish tapa, patatas bravas are potatoes fried in olive oil and served with a spicy tomato sauce. The savory and slightly spicy flavors of the patatas bravas will pair perfectly with the garlic and egg flavors of the Torrijas Saladas Con Ajo.

Huevos Rancheros: A hearty Mexican breakfast dish, huevos rancheros are eggs cooked in a spicy tomato sauce and served with a side of refried beans. The bold flavors of the huevos rancheros will complement the sweetness of the Torrijas Saladas Con Ajo, creating a delicious and balanced meal.

FAQ

Q: How do I prevent the garlic from burning?

A: Make sure the oil is very hot before adding the bread slices. Turn the bread before the garlic has a chance to burn. You may also want to whisk the egg mixture between slices so that the garlic doesn't settle to the bottom.

Q: What is the best way to store garlic?

A: Store garlic in a cool, dry place away from direct sunlight. It should be kept in a paper bag or a mesh bag to allow air circulation. Avoid storing garlic in the refrigerator as this can cause it to spoil quickly.
