  • 1 1/2 pounds tomatoes, chopped (vine ripened, 4 tomatoes)
  • 3/4 pound cucumber (quartered lengthwise, 1/2 English cucumber)
  • 3 green onions, chopped
  • 1/4 cup fresh basil leaves, cut into thin strips
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar (or white balsamic)
  • 3 tablespoons feta cheese, crumbled (or more)
  • Salt and freshly ground pepper, to taste

I cut this down to 1 serving and enjoyed it for my lunch...I did top it with shrimp meat for added protein...I used my expensive balsamic vinegar and it added a nice sweetness which complemented the tartness of the feta cheese...delicious...I would serve this to company...it makes a wonderful presentation...made for "Bill Board" tag game...

I love balsamic with tomato then add basil and feta cheese and you have a real winner of a salad. Very enjoyable. It will be made again for sure

Super Duper Yummo! We loved this fresh and easy summer salad! The balsamic does muddy the looks a bit, but certainly tastes great! The fresh basil really makes this salad. We enjoyed it with pan-fried Tilapia sprinkled with Greek seasoning and Garlic/Olive Oil Couscous. Freddy Cat says happy Summer! Made for the Billboard & Summer Vacation recipe tag games.
