"These little guys are so good you won't believe they are healthy! You may serve them as a side dish for brunch, lunch or dinner. Stick a toothpick in them and serve as an appetizer. They need something spicy to dip them in like Thai Chili sauce or Mango Habaner Jelly. The recipe is originally from Sunrise Tofu modified my me. They freeze really well. To serve from fozen defrost (20 minutes) - 375f for 12-15 minutes uncovered, they get a bit crisp outside,still soft in side. perfect. - If you are not into spicy serve them with your favorite BBQ sauce I use my mini chopper to crumble the tofu & chop the onions"

Step by Step Method
Step 1
Preheat oven to 400f
Step 2
Combine stuffing mix with hot water in a large bowl. Let it sit until the water is absorbed
Step 3
Add remaining ingredients, except eggs, use your hands and mix well
Step 4
Add eggs to the mixture, mix well
Step 5
Shape into 1 inch balls and place on a parchment lined baking sheet
Step 6
Bake for 25 - 30 minutes or until lightly browned
Step 7
Serve with spicy sauce
