Step by Step Method

Step 1

In large pan over medium heat add oil. Saute onion green peppers and garlic. Remove from pan, set aside

Step 2

Sprinkle chicken with salt and pepper, dust with flour, slowly brown on both sides

Step 3

Return sauted vegetable to pan. Add tomatoes, wine and crumbled rosemary

Step 4

Simmer until chicken is tender. Serve with rice

To make this a little lighter I sauteed the veggies in a little water and then added a little more as they were cooking to cut out the oil and fat, and I used whole wheat flour instead of white. It was very good and my hubby and I really enjoyed it with some brown rice, garlic and green beans and a glass of wine.

Wonderful flavourful chicken dish! I used yellow pepper cus that is what i had in and stewed tomatoes with chardenay and fresh rosemary. We loved it and will be making it again. Served it over brown rice with a cabbage/sprouts stirfry on the side. lovely supper, company worthy!!!

I absolutely loved this dish! I used Chardonnay wine in mine and it was the perfect pick. The wine along with the other ingredients melded so well together and flavored the chicken so nicely. I served it on it's own with a side of pasta with garlic and olive oil and poured some of the sauce over the pasta. Yummy! Thank you for sharing Gerry. Linda

We loved this dish! Super easy and very flavorful. I served it with leftover roasted potatoes. I also used crushed tomatoes mainly because DH does not like chunks of cooked tomato. I also used cream sherry which gave the dish a sweet and savory flavor profile. Made for Billboard tag.
