"For those 'Reuben' lovers and 'Fish' lovers ... this is for you. I know, it may sound odd - but this is really good, trust me. I use Tilapia for this, as it is so accessible and inexpensive; but catfish, flounder, trout; or any white fish will work. This can be - lunch, dinner, or even to entertain with it, a nice citrus salad and onion rings and it is a great sandwich to serve to company."

Step by Step Method

Step 1

Fish ... Add the flour, cayenne, Old Bay seasoning, salt and pepper to a small dish or to a ziploc bag. Then, add the fish, 1 filet at a time, and shake or dredge in the flour mix to coat. You don't want a heavy coating. Set the fish to the side to rest for 5 minutes before frying.

Step 2

Fry ... Add the oil to a saute pan (non-stick works best) and heat to medium high heat. Saute the fish on each side until golden brown; for Tilapia, about 3-4 minutes per side. Remove to a plate, cover with foil, and let it cool slightly. Then break up the fish using a fork. About 3/4 of each filet per sandwich.

Step 3

Sandwich ... Now, you can make your own thousand island dressing; but I find that a good store bought brand works just fine for this. Also - make sure the sauerkraut is at room temperature.

Step 4

Add the dressing to the first slice of bread (go lightly), then 1 slice of cheese, fish, sauerkraut, onion slices, another slice of cheese; and finish with the last bread slice slathered with the dressing. I don't add too much dressing, too MUCH can make a soggy sandwich. You can always add dressing on the side for those who like that.

Step 5

Grill ... In the same pan you grilled the fish in - just wipe it clean and return to medium heat. Then lightly butter the top of each sandwich (using 1/2 of the butter). Add the sandwiches to the pan (buttered side down); then, butter the top half with the remaining butter and cook on medium heat, covered lightly with foil for 5-7 minutes on the first side. Flip the sandwiches, and and cook until golden brown on the other side. Cooking it slowly will allow all the cheese to melt and the bread not to burn before the sandwich is done. Since the fish and the sauerkraut were both warm, it won't take long to warm up the sandwich.

Step 6

Serve ... I like to put 2 toothpicks in and cut diagonal in half. Serve with chips, fries, pickles and ENJOY!

Excellent!! This is going into my Best of 2023 file. I followed the direction except for the use of Swiss cheese - opting for white cheddar as a personal preference. The lightly crisped fish was very tasty and then throw in the thousand island dressing, red onions, a touch of sauerkraut, cheese, and pumpernickel bread and WOW what a meal!
