Step by Step Method
Step 1
Preheat oven to 400°F
Step 2
Place potatoes in large bowl.
Step 3
Generously coat potatoes with olive oil.
Step 4
Sprinkle with 3 tablespoons thyme and garlic salt.
Step 5
Toss to coat.
Step 6
Coat large rimmed baking sheet with olive oil.
Step 7
Arrange potatoes, cut side down, on sheet.
Step 8
Roast potatoes until tender and golden brown, turning every 15 minutes and roasting about 45 minutes total.
Step 9
Meanwhile, stir vinegar and sugar in heavy small saucepan over high heat until sugar dissolves.
Step 10
Boil until liquid is reduced to 2/3 cup, about 10 minutes.
Step 11
Mix in remaining 1 tablespoon thyme.
Step 12
Transfer potatoes to plates.
Step 13
Drizzle some balsamic syrup over potatoes.
