"Found at closetcookingdotcom & 1 of the recipes by Kevin Lynch included in his "Melty Grilled Cheese" Cookbook - We all know that grilled cheese sammies are the classic comfort food, but the pic of this recipe was a stunner & swept me back to my days in Dallas spent eating the best of the Tex-Mex genre. Per the intro: "W/all of its ingredients, this is 1 large sandwich & w/the salsa, sour cream & guacamole in there it can be 1 messy sandwich. Feel free to omit the salsa, sour cream & guacamole from the sandwich & serve them on-the-side." The black olives were my addition as DH loves them in all things Tex-Mex. This sandwich is definitely a good way to celebrate Cinco de Mayo in style! Enjoy!"

Step by Step Method

Step 1

Heat a non-stick skillet over medium heat.

Step 2

Butter 1 side of ea slice of bread. Place 1 slice in the pan w/buttered side down, top w/half of the cheese, the seasoned ground beef, salsa, lettuce, tomato, sour cream, guacamole, the remaining cheese & finally the other slice of bread w/ buttered side up.

Step 3

Grill until golden brown on both sides & the cheese is melted, about 2-4 min per side.

Step 4

Serve w/extra salsa, guacamole &/or sour cream for dipping or topping. Be prepared by having your knife & fork ready to spring into action.

Smells Like Salad

What do you do with the leftovers from Taco Tuesday...? This. I used Irish Dubliner cheese for extra *POW*. Because I was using salsa I skipped the tomato slices and added a bit of fresh cilantro in its place. Served solo as this was definitely a "meal-in-a-sandwich". FYC recipe tag completion.

This is definitely messy but wowsers is this tasty!!! A make again sandwich for sure. I used gluten free rice flour bread and this worked perfectly.

You're right, quite messy, but delicious. A great spin on a taco, with the added flavor of a grilled sandwich. I made a double recipe, but only needed about a teaspoon of butter to coat the pan. I liked your suggestion of keeping the salsa, sour cream and guacamole on the side, only I ended up opening the sandwiches up after pan toasting them and putting those condiments all inside, along with the lettuce and tomato. It made for a very yummy dinner!
