"A bit of a twist on cranberry sauce. I'm not sure I can recommend this with the classic Thanksgiving turkey; but, I have made this with turkey and chicken other times of year; when, the classics were not necessarily served. Don't get me wrong; this is a great sauce; but, I don't think it necessarily goes with the classic stuffing or sweet potatoes w/marshmallows. I tend to serve this with a savory grilled or roast turkey breast and roasted vegetables; and maybe some mashed spuds. I also love to serve this with pecan crusted turkey or chicken tenderloins. It has a really nice sweet/savory taste to it - much different than the orange or sweeter flavored, more 'traditional' cranberry sauce."

Step by Step Method

Step 1

Sauce ... Add the cranberries, wine, honey, olive oil to a pot; and, bring to medium high heat. Then, reduce to low; and, simmer for 10-15 minutes until the cranberries begin to pop and break down. Once the sauce begins to thicken, season with salt and pepper; just a pinch - and remove from the heat to cool.

Step 2

Store ... Once the sauce had cooled, store in a mason jar or tupperware container. Will last up to 2 weeks in the refrigerator.

Step 3

Serve and ENJOY! ... As mentioned; not really a classic Thanksgiving cranberry sauce. But, I love to serve this with turkey or chicken other times of the year. Nut crusted turkey or chicken are wonderful served with this; also, great with a simple mustard crusted turkey breast. This is also really good served with pork as well.
