Step by Step Method
Step 1
In a medium bow, combine cornstarch with salt and pepper. Add in diced chicken, using a spoon or your hands toss to coat the chicken completely with the cornstarch.
Step 2
In another bowl add beaten egg.
Step 3
Dip the cornstarch-coated chicken in beaten egg, the fry until golden, crispy and cooked through. Set aside.
Step 4
In a large pan, heat oil and fry garlic until fragrant.
Step 5
Add the bell pepper, cider vinegar, soy sauce, ketchup and sugar. Bring to a boil.
Step 6
When the sauce has thickened, add the cooked chicken. Toss to coat.
Step 7
Garnish with chopped scallions and sesame seeds. Serve with rice.
