Sweet Potatoes & Orange Juice

Just the right amount of sweetness. The orange gives a little perk to the flavour. Perfect with a Cornish Hen Dinner. This will be made again..
- 8 ounces sweet potatoes (3 potatoes cooked as described below)
- 3 to 3/4 tablespoons butter
- 3 tablespoons brown sugar (plus)
- 3 teaspoons brown sugar
- 1 1/2 teaspoons grated orange rind (or lemon rind)
- 9 tablespoons orange juice
- 1 teaspoon salt
- Paprika, pinch (or to taste)
What You Will Need
No special items needed.
Boil sweet potatoes in jackets by dropping them into boiling water to cover and cooking covered for about 25 minutes or till tender.
Peel potatoes and mash thoroughly.
Combine ingredients except for the 3 teaspoons of brown sugar and the paprika.
Put in baking dish and sprinkle top with the remaining brown sugar and the paprika.
Bake in a preheated 375' oven for 30 minutes.
Remove cover and bake until brown.
