Sweet Onion Salad Dressing

"This is my favorite way to dress a salad. I make up a quart size jar, 2-3 times the recipe, and keep it in the fridge. Then, I just keep scooping out the onions to dress our salads. This works great as a make-ahead salad too. Put the onions on the bottom of the bowl and toss when you get wherever you're going. Originally inspired by Kittencal's Greek Salad."

Step by Step Method
Step 1
Make Ahead: Mix all ingredients except onion in a canning jar and shake, then add onion, stir and store in fridge. Make ahead at least one day, so flavors have time to settle in.
Step 2
To Serve: Either take out of fridge and hour ahead, or place in microwave for 10 seconds to loosen up.
Step 3
Stir dressing, then with a slotted spoon, scoop out some onion and toss salad with it.
Step 4
Seems like that always carries enough dressing with it to satisfy us. If you like, you can use a regular spoon to get more of the dressing too. Amount of onions scooped will depend on size of salad.
Step 5
Later: If all the onion gets used up before the dressing, just add more onion and parmesan.
