Step by Step Method
Step 1
Combine in large stainless steel or enamel cooker the vinegar water and spices; bring to a boil, reduce heat and simmer 5 minutes.
Step 2
Meanwhile, cut melons in half, then deseed.
Step 3
Make melon balls or 1 inch squares.
Step 4
Remove pan from heat, add balls. Let stand 1 1/2 hours.
Step 5
Add sugar and bring to a boil. Reduce heat and simmer on low for 45 minutes to an hour until melon is slightly transparent.
Step 6
Pack melon into hot sterile 12 oz jars. Pour in hot syrup leaving 1/4 inch head space.
Step 7
Remove all air.
Step 8
Seal water bath for 10 minutes.
