"A perfect light dessert. A sweet and spicy marinade and grilled. These can be served as is with a little whipped topping or mascarpone cheese and toasted pecans; or my favorite, over vanilla ice cream. Also, try them over angle food or pound cake. And, these are equally good chilled or served warm. Fresh peaches are a must for this recipe. You can also use whole peach halves if you prefer."

Step by Step Method

Step 1

Peaches ... I like to use thick slices or wedges, but you can also use halves. I do not peel mine, I don't find it necessary, but you can if you want. Remove the pit and then add to the marinade.

Step 2

Marinade ... Add the bourbon, water, honey, cloves, brown sugar and cayenne. Mix well and place in a bowl or pie plate. Add the peaches and marinate anywhere from 1-4 hours.

Step 3

Grill ... An outdoor grill creates a great smokey flavor, but they can also be done on an indoor grill pan. Season the peaches with a touch of black pepper and then brush on some of the marinade as the peaches grill. You want nice grill marks, but don't over cook them. You want them to remain firm to the touch.

Step 4

Serve ... As I said, over pound or angel food cake; ice cream is the best; or just as is. Maybe a topping of yogurt, mascarpone or whipped topping. And don't forget toasted pecans which go perfect with the peaches. ENJOY!
