Step by Step Method

Step 1

Preheat the oven to 375 degrees F. Line a 12 cup muffin tin with paper liners.

Step 2

In the bowl of an electric mixer, cream the butter and sugar.

Step 3

Add eggs, one at a time, and blend until fluffy.

Step 4

Mix in the milk and the almond extract.

Step 5

In a separate bowl, sift together the flours, baking powder and salt.

Step 6

Add the dry ingredients to the milk mixture, and blend until just combined.

Step 7

Fold in the strawberries and almonds.

Step 8

Fill the muffin cups to the top, and bake for 30 minutes.

We love these and have them quite often. Even when the strawberries aren't all that good, these muffins come out great. The addition of the almonds adds a nice crunch and flavor!

Strawberries are so good right now so I decided to make us some muffins. They are so delicious that my kids said I better double the recipe next time so we can have them for more than one breakfast! I agree with them, they are awesome!

Made muffins for the May long weekend coffee time treats. Only had medium liners which had me get 17 lovely medium sized muffins.These were wonderful, reminded me of Strawberry Shortcake, that's what hubby said too! They are super delicious served warm and just as good later. Adding this one to my Brunch Cookbook, know they will impress family and friends.
