"A Starbucks Copycat recipe, I didn't make this cake yet, it sure uses a heck of a large amount of butter (1 1/2 cups) I say with that amount it must be good lol! Makes two 9x5 loaves"

Step by Step Method
FOR THE CAKE
Step 1
Preheat oven to 350 F. Line two 9 x 5 x 3 loaf pans with parchment paper.
Step 2
Mix butter and sugar with electric mixer until light and creamy (approx. 5 minutes.) Mix in the eggs.
Step 3
In a separate bowl, sift together flour, cocoa, cinnamon, salt, baking powder and baking soda.
Step 4
In another bowl, whisk together the buttermilk, coffee or water and vanilla. With your mixer on a low speed, begin adding the contents of each bowl to the butter mixture, alternating between the two until your mixture is fully blended.
Step 5
Divide the batter between the two pans.
FOR COCOA SPICE TOPPING
Step 6
Combine the sugar, cinnamon, cocoa, ginger and cloves. Divide mixture in half, then evenly layer each half of mix on top of the batter in the two pans. Then sprinkle with the sparkle sugar.
Step 7
Bake for 45-50 minutes.
