Step by Step Method
Step 1
Preheat oven to 350F degrees. Heat olive oil in frypan,over medium heat; add the onion, red pepper, salt and pepper, stir fry until onion is soft, about 5 minutes; add the spinach, turn over and over to mix, heat just until wilted, 2 or 3 minutes; set aside.
Step 2
Break eggs into a large bowl, beat with an electric mixer or a whisk until foamy. Spray large frypan with veggie spray; over high heat add the beaten eggs, move the eggs around with a spatula until about half set, about 3 or 4 minutes. Add the spinach mixture to the eggs and stir lightly to evenly mix. Sprinkle the shredded cheese evenly over to top the frittata.
Step 3
Place the frypan on the middle rack of the oven and bake for 30 minutes until Cheese is melted, edges are brown and the frittata is raised and puffy. Slice into 4 and serve with a nice tomato and lettuce salad.
