Step by Step Method
Step 1
Using your hands, squeeze out as much excess moisture as possible from the spinach. It should measure about 1 cup.
Step 2
Combine the spinach with next 6 ingredients in a medium bowl.
Step 3
Boil a pot of water to a gentle simmer.
Step 4
Place 4 wonton wrappers on a cutting board. Brush edges with water. Scoop 1 tbsp filling onto half of each wrapper. Fold diagonally in half, forming a triangle. Press edges to seal. Overlap 2 ends together and press to adhere. Repeat with remaining wrappers and filling. Arrange in a single layer on a baking sheet.
Step 5
Gently drop the tortellini into pot of gently-boiling water in batches, stirring occasionally, until just tender, about 3 min. Use a slotted spoon to transfer to bowls.
NOTE: if not serving right away, drizzle a fair amount of oil in a bowl, add tortellini in and gently toss in the oil so as not to stick together
