Step by Step Method

Step 1

Place the oil in a large skillet.

Step 2

Add spinach and over medium heat, stir until spinach is wilted.

Step 3

Cool the spinach.

Step 4

Preheat oven to 375f.

Step 5

Squeeze all the water from the spinach. Finely chop the spinach.

Step 6

Add the feta, pine nuts, garlic, mint, salt, pepper and lemon juice to the spinach; mix well.

Step 7

Rinse the fish and dry it inside & out. Stuff it. Place in non stick foil in an oven proof pan. Place lemon slices on top.

Step 8

Seal the foil.

Step 9

Bake for 45 minutes or until the fish flakes easily.

I cut the recipe about in half, using 2 - 8 oz. salmon fillets, making the cooking time much less, because I like pink in the middle. They were done in about 25 minutes. I used all the ingredients but the mint, and added chopped black olives, and it was absolutely delicious. If you are a fan of Feta cheese then this is for you to try.
