Step by Step Method

Step 1

In a large saucepan or Dutch oven, cook the onions in the butter over medium heat until soft, about 5 minutes. Add the garlic and chorizo to the onions and cook until the sausage loses its raw color, about 5 minutes. Add the harissa and red pepper flakes, and then turn up the heat to high.

Step 2

Once fragrant, deglaze the pan with the wine, allowing to bubble for a minute. Lower the heat to medium, add the chicken stock and bring to a simmer. Add the prepped mussels and cover to steam until the mussels open, 3 to 4 minutes. Add the cream and stir. Serve immediately with plenty of sliced French bread for dipping.

Cook's Note: If harissa cannot be found, substitute 1 tablespoon of tomato paste plus 1/4 teaspoon cayenne pepper.

Five stars X 2! This is going into my Best Of file for sure. I served this up for four of us, (DO the bread!), and everybody sat around and talked and raved about these mussels! They were fabulous, and we talked and talked and dipped the crusty bread, and we put away dinner fixings because they were not needed! Serve this with lots of crusty bread and butter, a salad, some nice wine, and good conversation, and you have a dinner party! I didn't add the red pepper flakes, the Harissa was enough for us. Everybody liked the spiciness of this without the added red pepper flakes and said it was perfect for spicy, and I agree. It would be pretty HOT with a teaspoon of the pepper flakes. And I know a lot of people like it very hot, so they should add the flakes. Thank you for making a lovely dining experience for me and mine!

Very unusual combination, but it turned out delicious. I used mild chorizo and less harissa because my harissa brand is really, really hot. Will make this again when I get good chorizo and mussels! Thanks for posting. Made for FYC

I did a full recipe so I will be getting two meals out of one as I was the only one eating it but be warned it is lives up to its name and is spicy but still ever so good. For the left overs I will heat up the liquid and then return the left over chorizo and mussels and heat them through and of course accompany with crusty bread an absolute must.
