"This makes a nice gift in a jar, but I like to mix it up in a zipper-bag to take out in the RV. I do this with other baking recipes also, so we don't have to carry large amounts of flour, sugar, etc. Just add the wet ingredients and bake."

Step by Step Method
Step 1
Combine all the Muffin Mix (dry) ingredients in a medium bowl.
Step 2
Place in a pretty airtight jar, or a large zipper-type freezer bag. Seal.

Spicy Muffins Makes 1 dozen/ Contents of jar (or bag)/1/4 cup butter or margarine, melted/1 egg/1 teaspoon vanilla extract/1 cup water.
Step 4
Heat the oven to 400 degrees F. Grease 12 muffin tins.
Step 5
In a large bowl, combine the muffin mix with the butter, egg, vanilla extract and milk Stir the mixture until the ingredients are blended. Do not over-mix. The batter will be lumpy.
Step 6
Fill muffin tins 2/3 full, and bake for 15 minutes.
