"I have 3 easy recipes which I call 'Toppings.' Whether you call it a salsa, topping, salad or relish is up to you; but they are all delicious served over or with chicken, pork, or seafood. They are also wonderful used as a garnish or salad in tacos, quesadillas or tostados; and even as a salad toppings - so these recipes are very versatile. Step by Step Method

Step 1

Topping ... Mix the scallions, chili sauce, lime juice, ginger (grate it over the bowl to get all the juice), cilantro, salt, and pepper together in a bowl. Then add the mango and avocado and mix well; but try not to mash up the avocado too much. It is important to purchase a firm avocado so it doesn't fall apart. Season lightly with salt and pepper. Cover well and refrigerate at least 1 hour before serving. I like to put 1 piece of plastic wrap directly on the fruit and then another piece over the top.

Step 2

Serve ... As I said - Endless ideas. It is excellent over grilled salmon, swordfish, scallops, shrimp, chicken breasts, or pork tenderloin; but this is equally good over a bed of fresh greens and your favorite salad toppings. Or in any of your favorite Mexican dishes; such as, fish or chicken tacos, tostados, tortilla bowls, quesadillas, etc. ENJOY!
