Spicy Honey Orange Carrots
"Such a basic recipe, but so good. A little honey balances out the orange and fresh parsley, just makes this such a nice side dish."

- 1 lb carrots, peeled and sliced in rounds
- 1 tablespoon fresh orange juice
- 2 tablespoons honey
- 2 tablespoons unsalted butter
- Pinch cayenne
- 2 tablespoons fresh parsley, fine chopped
- Salt
- Pepper
What You Will Need
No special items needed.
Step 1
Carrots ... In a medium saute pan (not a pot), add the carrots and enough water just to cover about 1/2" deep water in the pan. You don't want to completely cover the carrots. Bring to a light boil and then reduce to medium heat. Cover and cook 7-10 minutes until the carrots are tender. This will depend on the thickness of your carrots and the size of your pan.
Step 2
Sauce ... Uncover and drain any extra water out. Add the butter, honey, orange, and cayenne to the carrots and mix to combine. Stir in the parsley, salt and pepper and they are ready to serve. ENJOY!
