"I first saw this on a friends blog; but, I believe he indicated it was a Melissa D'Arabian recipe; but, it's a bit different then hers. But, where ever it came from, it is a really nice recipe. The salad topping is really what makes this extra special for me. It is a nice light dinner, filling; but, full of flavor. I serve it with a mixed melon salad on the side. The rice and dressing can both be made ahead to make this a quick dinner to put together."

Step by Step Method

Step 1

Sauce ... Add all the ingredients to a small cup or bowl and mix well. Cover and refrigerate until ready to use. The sauce can easily be made in advance. I like to use a small 'tupperware' type of container. Just add all the ingredients, cover and shake - super easy.

Step 2

Rice ... Cook the rice according to package directions. Remove from the heat and set to the side and keep covered. You can always make this ahead and simply reheat in the microwave. I like brown rice, but use whatever rice you have on hand.

Step 3

Filling ... Add the oil to small saute pan and bring to medium heat; then, add the turkey, mushrooms, and garlic and saute for 10-12 minutes (until no longer pink), breaking up the turkey as it cooks, stirring often. Finish by adding the soy sauce, brown sugar, and rice wine vinegar. Stir until combined, reduce the heat to low and simmer 2 minutes until ready to serve.

Step 4

Lettuce and Salad/Topping ... As the filling cooks, prepare the wraps and salad. This is fun to serve family style, so everyone can help themselves. Add the lettuce leaves to a large platter along with the salad/topping. To make the salad/topping - add, the carrots, bean sprouts, water chestnuts, and scallions to a small bowl and toss. Add the salad bowl to the platter as well.

Step 5

Serve ... Add the bowl of rice, and the bowl of the turkey to the platter too, and DIG in! Everyone can just help themselves and make their own wrap. Take a leaf and stuff it with ... a spoon of rice, some of the turkey, the salad/topping, and finish with a drizzle of the sauce. Wrap, roll, and ENJOY!

Step 6

These are so good and addictive; make them anyway you want. Serve with a fruit salad, and enjoy a lighter healthy, but satisfying dinner.
