"Love vegetables and love seafood making this a perfect dish for my lunch or a light evening meal as well as for my seafood and vegetable-loving family. Enjoy spiralized vegetables which saw me pass along my manual this past week and go with an electric spiralizer which is far easier to use. This is one I make often and find one can vary the seafood choices and seaonings adding variety to meal time. The tomato sauce can be made ahead of time needing only to add the seafood while cooking the zucchini pasta."

Step by Step Method

Step 1

In large pot over medium heat add butter and vegetable oil, saute onion until soft and golden

Step 2

Add tomatoes, seasoning, wine, garlic if using simmer 7 – 8 minutes, lower heat add fish and shrimp simmering until done.

Step 3

While sauce is simmering cook zucchini ‘pasta' in salted water until just done, drain and top with the tomato sauce.

Step 4

NOTE one can make the tomato sauce ahead of time, heat and add in the seafood while cooking the zucchini pasta
