"This recipe has a nice punch, not too spicy but mighty tasty. If any heat scares you leave out the jalapeno. Another option is to serve the cubes on toothpicks as an appetizer with the sauce on the side - Makes about 32 appetizers. If you half freeze the tenderloins they are very easy to cut into cubes. This recipe BBQ's well. I subbed chicken and it was Mmmmm"

Step by Step Method
Step 1
Combine the oil, lemon juice, oregano, rosemary and garlic

Place the pork in a zip lock bag or non metalic container and pour on the marinade- Place in fridge and marinate for 8 hours or overnight. Flip the bag a few times
Step 3
Combine the yogurt, jalapeno, green onion, parsley, and tomato. Place in the fridge ready to serve with the cooked meat
Step 4
Loosely skewer the meat, place skewers on a baking sheet, baste with the marinade, Bake in 400f for about 25 minutes depending on the size of the cubes of meat. Baste several times with the marinade
Step 5
Serve with rice or noodles. Place the meat on the rice and drizzle the yogurt sauce over the meat and rice or serve the sauce on the side.
