Step by Step Method

Step 1

Coat a large nonstick frypan with cooking spray, and place over high heat until hot. Add chicken, stir fry 3 minutes. Stir in chili powder and cumin. Remove chicken from frypan, set aside.

Step 2

Add oil to frypan, and heat over medium high heat. Add green pepper strips and onion, stir fry 3 minutes. Return chicken to frypan and stir in corn and salsa.

Step 3

Stir fry 2 minutes more or until thoroughly heated. (Alternately, thinly sliced into strips, turkey, beef or pork may be used).

Great easy tasty recipe right up my alley!!! I used frozen b/s chicken breast tenders which I cut after I browned and cooked them. I also used frozen assorted bell pepper strips. I added a sprinkling of garlic salt and zucchini half slices to the mix for the perfect one pot meal! Hubby and I enjoyed this with a sprinkling of cheese and a dollop of sour cream. Made for the Billboard recipe tag game.

This recipe is so easy and so good it goes right up there to the top of my list for quick great recipes. I had a special Cilantro Lime salsa that was just perfect. I cut the recipe back to one breast that I was making for two servings and kept the peppers and onions way up there. Thanks Derf for a definite keeper recipe
