"You may be asking what is a “Snowball” cookie? well, they are also known as Mexican Wedding Cookies, or Nut Butter Cookies. There made with pecans, and rolled into powdered sugar so they look like snowballs although I have also made them with toasted walnuts, they are the perfect Christmas cookies because of the white confectioners sugar coating"

Step by Step Method
Step 1
Cream together butter, 3/4 cup sugar and vanilla in a stand mixer.
Step 2
Add flour into butter mixture 1/2 cup at a time, when all mixed, then mix in ground pecans
Step 3
Roll into 24 balls.
Step 4
Bake at 350 for 9-12 minutes.
Step 5
Remove from oven, let cool 1-2 minutes. WHILE STILL WARM, roll in confectioners' sugar. Cool then roll one more time in the sugar.
