Step by Step Method

Step 1

Combine the first 4 ingredients in a medium bowl. Stir in 2 teaspoons dill and chopped salmon.

Step 2

Peel cucumbers in alternating vertical stripes to make them decorative. Cut the cucumbers into 3/4-inch slices, and scoop out seeds with a small spoon, leaving the bottom intact to make a cup.

Step 3

Spoon about 1 tablespoon salmon mixture into each cucumber cup. Sprinkle cups evenly with remaining 1 teaspoon dill and black pepper.

This is a treat! I used lox, cut the recipe back to 6 cups. We loved it. The fresh dill gives the final touch. This will be made again.

I only had about 1/3 of an English cucumber lurking in the fridge and I had Smoked Salmon in individual 40 gram packages so I decided to try these for a light lunch. They were so very good that I was tempted to drive to the store for more cucumber! So easy to put together and so darned good!! They will be made often for parties as well as lunches for myself. Excellent! These make a great and easy party appetizer! I didn't use the "lox" type of salmon, but rather a chunk of smoked fillet. So good! I usually make something similar with Kewpie Mayo and Wasabi - and guests always gobble them down. This will be my new go-to appetizer, along with my wasabi cucumber cups! I find it easiest to use a small melon-baller to scoop out the cucumber cups - easy peasy! Thanks for posting... made for CQ4, Team Happy Campers.
