"So easy and delicious. If you have a panini press, definitely use that; I use my grill pan with a heavy pan sitting on top. I still get good grill marks and the sandwich is pressed. In the picture I uploaded I used a regular non-stick saute pan; so don't worry, either method works. And make sure to use arugula, it adds that nice peppery taste, along with a hearty rustic bread. The combination is perfect."

Step by Step Method

Step 1

Sandwich ... Add a thin layer of cream cheese to the bottom slice of the bread. Top with the salmon, salt, arugula and the top slice of bread.

Step 2

Grill ... Spray the grill or pan with a non-stick spray (you can brush with melted butter, but I don't think it is necessary). Add the sandwich and top with a heavy pan (I use my cast iron pan). You can also use a regular pan and place a heavy can in the pan; you just want to weigh it down. Grill on each side until golden brown. Let rest a minute before slicing. ENJOY!
