"A holiday favorite adapted from another recipe. This brine will create the juiciest bird you've ever eaten and will provide tons of rich, flavorful gravy. I never have enough room in my fridge to prepare the bird so I'm including instructions on how I brine the bird overnight by using a bucket and a cooler. Prep Time and Cook Time are estimated and do not include the overnight soak."

Step by Step Method
Step 1
Sanitize the five gallon bucket by washing and rinsing thoroughly.
Step 2
In a large pot, bring apple juice, brown sugar and kosher salt to a boil. Skim off any foam and let cool completely.
Step 3
Dump some ice in the bottom of the cooler, stand the bucket in the cooler and pack any open spaces with remaining ice.
Step 4
Dump apple juice mixture in bucket and stir in remaining ingredients except brick and turkey.
