Step by Step Method

Step 1

Combine all the ingredients in a large bowl. Fold in the strawberries last.

Step 2

Divide into 14 muffin tins that have been sprayed with non-stick cooking spray. (Don't use baking cups, they stick really bad to the paper)

Step 3

Bake at 350 degrees, for 25-30 minutes.

These are very moist and tasty for diet muffins. I tweeked the recipe just a little. I processed 2 of the 3 cups of the oatmeal in my blender so I had "oatmeal flour" along with the whole grain. I also used unsweetened almond milk. I also only made 12, which brought the calorie count to 127.5 each.
