Step by Step Method

Step 1

Cut the cauliflower into florets, and boil for 6-7 minutes, until fork tender.

Step 2

Strain the cauliflower well, and blend it in a food processor or blender until it reaches your desired consistency.

Step 3

Add in the cheese, salt, and pepper and process until mixed.

Step 4

Top with chives, if desired.

Step 5

Serve.

Good recipe as written, but even though we do mostly eat low fat, we ended up adding more cheese and a little drizzle of olive oil to it. It tasted great that way, and didn't make it too much less "skinny". Definitely generous portions.
