Step by Step Method
Step 1
Dressing ... Add the lemon juice, vinegar, red pepper flakes and a pinch of both salt and pepper to the blender. Blend to mix; then, slowly add the oil to the blender to emulsify (or to make it creamy). The last minute, add 2-4 of the artichokes and pulse to get a smooth consistency. This will give the dressing a nice creamy texture.
Step 2
Salad ... First, add the greens to a large bowl along with a bit of the dressing, just enough to coat. Then transfer to a serving platter. Then fine chop the remaining artichokes and add to a small bowl along with the olives, cucumbers, scallions, and a pinch of both salt and pepper - and toss to combine. Add the olive cucumber topping to the top of the salad and finish with a bit more of the dressing. ENJOY!

This dressing can be served with any of your favorite greens.
