Step by Step Method

Step 1

Whisk ingredients and let sit for 5 minutes. It will look lumpy, that's okay.

Step 2

Meanwhile, heat heavy non-stick skillet over medium-high heat. Melt butter in pan.

Step 3

Add eggs to pan, gently folding with a heat-proof spatula as they cook.

Step 4

Cook until eggs are just about done, then remove from heat.

Step 5

Increase cooking time for more servings, but don't increase baking powder over 1/2 teaspoon.

Step 6

Serve on heated plates.

Neat trick adding baking powder and it really works. Loved the eggs. Served with stir fry peppers, onions, mushrooms and leftovers. Also 12 grain toast and sliced tomato. A brunch fit for a queen
