Step by Step Method

Step 1

Preheat oven to 400° F.

Step 2

Chop shrimp fairly small. Put in a bowl with the rest of the ingredients EXCEPT the mushrooms. Mix well.

Step 3

Choose large enough crimini mushrooms for stuffing. Wipe the dirt off them and remove the stems. Place mushroom caps, open-side up, in an 8" x 8" baking dish that has been sprayed with non-stick cooking spray. Cut off a small portion of the end of the stems and discard. Chop up the rest of the stems fairly small and add to the shrimp mixture. Mix well.

Step 4

Stuff mushroom caps with shrimp mixture till heaping or all the filling is used up.

Step 5

Bake in preheated 400° F oven for 15-20 minutes or until mushrooms have released their juices and the filling is golden brown.

Step 6

*You can find the True Lime crystallized lime on their website at truelemondotcom. Don't choose the True Lime limeade. Choose the crystallized lime. Then you can do a search to find where you can get it at a store near you. Or if you have fresh limes, you can just use the zest of 1 lime.

Roasted Asparagus with Garlic and Parmesan - Roasted asparagus with garlic and parmesan is the perfect side dish to the shrimp-stuffed crimini mushrooms.
