"Made this for breakfast this morning, using some mussels that were left of from yesterday when I made Tisme's #recipe22962 and some left over crab meat from the freezer."

Step by Step Method

Step 1

Heat up a small frypan of medium high heat and add the oil to warm.

Step 2

Lightly whisk the two eggs and the milk and add salt and pepper to taste.

Step 3

Pour egg mix into the warm fry pan and lower heat a little, slowly bring in the setting egg from the edges to and swirl pan to let uncooked egg go to the edges, keep doing this till egg is nearly set but still a bit liquid to the centre.

Step 4

Put mussels and crab meat to one side and let heat through for a minute or two and then flip the other side over the mussels and crab meat and continue to cook for another minute.

Step 5

Slide omelette onto a plate and enjoy.

Great filling for a satisfying omelette. This will be wonderful for Brunch, Lunch or Dinner. I found a small jar of Mussels in brine that was just the right size for 2 omelettes(I cut out adding any more salt) and used artificial crab. Lovely combination of flavours.Another recipe that will be made again!
