"Adapted from The Alaskan Wilderness Cookbook. In Italy, seafood is never served with cheese. Fortunately, Alaska isn't in Italy. Top with herbed croutons if desired. Fresh or canned seafood may be used."

Step by Step Method

Step 1

Melt butter in a large soup pot.

Step 2

Add onion and celery and cook, stirring constantly, until translucent.

Step 3

Add potatoes and water and cook until potatoes are tender.

Step 4

Add seafood.

Step 5

Simmer gently just until heated through, about 5 minutes.

Step 6

Add salt, pepper, and cayenne.

Step 7

Stir in cheese and heat slowly just until cheese melts.

Step 8

Scatter parsley and pimiento over each serving.
