Step by Step Method
Step 1
Soak 8 wooden skewers in water for 30 minutes or use metal skewers.
Step 2
Preheat grill to high.
Step 3
To assemble skewers using two skewers which are parallel to each other thread one bacon strip, add a scallop and then flip the end of the bacon over the scallop and skewer in place, add a cucumber slice and a tomato - repeat until skewer is full using about 3 scallops, 3 cucumber slices, 3 tomatoes and 2 strips of bacon per skewer. Repeat process for remaining skewers. There will be 4 kabobs (2 skewers per kabob). Season with salt and pepper.
Step 4
Grill skewers for 4-5 minutes per side and cook until bacon is cooked and scallops begin to turn golden.
