"I had this last year at a dinner party, and it was absolutely delicious. It was actually served as a first course with some savory crackers or rustic bread. But, this could be an appetizer, or dessert as well. My friend sent me the recipe, along with the link; but, unfortunately the site is no longer up. It is really a wonderful recipe - and just a bit different."

Step by Step Method

Step 1

Onions ... Melt the butter and a pinch of sugar in a nonstick saute pan on medium heat. Then, add the onion slices to the pan, and saute for 10-15 minutes until golden brown, stirring often. You want them lightly caramelized.

Step 2

Peaches ... Add the peaches to a small casserole dish, lightly sprayed with a nonstick spray. Season with a pinch of salt, pepper, and herbs de provence. Top with the onion slices, and cheese.

Step 3

Bake ... Preheat the oven to 400 degrees, and bake on the middle shelf for approximately 20 minutes; until the cheese is melted, golden brown, and bubbly.

Step 4

Serve and ENJOY! ... Serve with rustic bread or crackers. Great for an appetizer, first course; or, even dessert.
