Sausage, Chicken & Penne Casserole
"Lordy this is good and easy to make, I've made this several times and everytime it seems to get better and better! Leftovers make a great meal that is you have any left. The last time I made this I added in a small handful of black sliced olives that addition really kicked it up. For two smaller meals bake in two 8 inch pans and you could freeze one for another meal"

Step by Step Method
Step 1
Heat the oven to 375°F.
Step 2
Spray a 9x13 baking pan with Pam spray.
Step 3
Cook sausage meat and onion large skillet until browned. Mix in cooked pasta, pasta sauce, 1/4 cup Parmesan cheese, 1 1/2 cups mozzarella cheese and chicken. Add salt and pepper.
Step 4
Spoon into baking pan; top with remaining 1/4 cup Parmesan cheese.
Step 5
Cover with foil. Bake 25 minutes. Uncover and top with remaining 1 1/2 cups mozzarella cheese. Continue baking until hot and bubbly, around 15 minutes.
