"This takes a bit of prep work ... just all the chopping; but, then it's just add the pot and turn it on. Serve over rice for a great weeknight meal. This is a pretty basic recipe, but I do add mushrooms; and, when I was married, my son and husband loved when I added carrots. So, you can change it up. But, I love this because it is in the crock pot. Now, I don't sear the meat first ... I'm sure you could which normally I do; but, I don't for this and it seems to come out just fine. Please remember, the steak is cooking for quite a while, so you don't want it TOO thin."

Step by Step Method
Step 1
Sauce ... Add the cold water and corn starch together in a small bowl and mix well until dissolved. Then add the broth, wine, soy sauce, and sugar - mix well, and set to the side.
Step 2
Steak ... A couple of notes here. First - Freeze the steak until firm, NOT solid; it makes it so much easier to slice. Then take your slices and add them to a ziploc bag until ready to use. I normally do this the night before. Then 30 minutes before adding to the crock pot. Season your steak with salt and pepper on both side, and let it sit on the counter to take the chill off (15-30 minutes).
Step 3
Vegetables ... Prepare all your vegetables. Now, some recipes call to cut the vegetables in chunks; I like to cut in strips; that is up to you - Personal taste.
Step 4
Crock Pot ... Add the steak, peppers, onions, garlic, ginger, tomatoes and the sauce to the crock pot - mix to combine. Top with the mushrooms, but do NOT mix. Cover and turn your pot on. Three (3) to 4 hours on high, or I prefer low, 6-7 hours. Again, everyone's crock pot is different. The newer ones do cook much quicker. My newer pot, I cook on low, and at 6 hours, everything is done.
Step 5
One Note ... About 1 hour or 30 minutes before serving, mix everything to combine, including the mushrooms. They should be cooked through, but they need to be combined with sauce at this point.
Step 6
Sauce ... I like a little sauce with my pepper steak, especially when served over rice; but, if you are one who likes a thick sauce - simply add a bit more corn starch and 1 teaspoon cold water to a small cup and mix mix. Then, add that to your pepper steak. Mix well; and, after a few minutes, it should thicken up a bit. I like a bit thinner sauce to top over my rice.
Step 7
Serve ... Make your favorite rice and dinner is done. Maybe a dinner roll, fresh fruit, or a salad if you like. Also ... rice reheats beautifully; a great dish to make ahead. Top your pepper steak over the rice and ENJOY! Yes, there is a bit a prep cutting everything; but, then you are done.
