2 teaspoons salt
1 teaspoon black pepper
2 teaspoons peppercorns
1 teaspoon sugar
1 pound jumbo shrimp, shelled and deveined
2 tablespoons olive oil
1 chili pepper, chopped fine (and seeded, if you prefer)
1 teaspoon fresh ginger root, grated
3 garlic cloves, minced fine
Step 1 |
Combine salt, pepper, peppercorns, and sugar with a mortar and pestle; set aside. |
Step 2 |
Rinse shrimp under cold running water; pat dry with paper towel. |
Step 3 |
Heat oil in a large skillet over medium heat. |
Step 4 |
Add shrimp, chili pepper, ginger and garlic; stir-fry 4-5 minutes or until shrimp are cooked. |
Step 5 |
Add salt and pepper mixture and stir-fry for one minute more, making sure it doesn't burn. |
