"This is a high-fat recipe, if it's not for you then move on to another recipe. I used fresh cooked salmon I suppose canned would be okay but why would you use canned when fresh is plentiful and so easy to cook. Also fresh sauteed mushrooms could be added"

Step by Step Method

Step 1

Melt 2 tablespoons of the butter in a saute pan or skillet over medium heat. Add the peas and saute (about 3 minutes for fresh peas and 1 minute for thawed).

Step 2

Add the remaining 2 tablespoons butter and cream, reduce the heat to low, and cook, stirring occasionally, about 5 minutes Add the salmon, 1/2 cup of the Parmesan and nutmeg. Stir over low heat until the cheese melts and the salmon is heated through, about 2 minutes (the sauce should not boil). Season with salt and pepper.

Step 3

Place cooked pasta it in a heated bowl. Pour the sauce over the pasta, add the parsley, and gently toss to mix. Serve immediately.

Sometimes your looking for just that right thing for comfort food and this is at the top of my list. I did use canned salmon, and canned peas which added to the flavor big time. We loved it and will certainly have it again sometime. Delicious served on top of mashed taters!
